Abstract

Vegetable consumption in school children is still lacking due to several factors ranging from family economic factors to mother's knowledge and mother's habit of providing vegetables at home. Consuming sufficient vegetables must be applied to children from an early age. One simple and easy way to stimulate children to eat vegetables is by modifying vegetables. The purpose of this study was to determine the level of preference for vegetable nuggets in relation to vegetable consumption in children in elementary school. This type of research is experimental research with a quasi-experimental design. This research was conducted for 4 days with 3 interviews conducted with the 24-hour recall technique and 1 day of administration using the organoleptic test technique on vegetable nuggets. The test was carried out at the level of preference with the categories of color, taste, aroma, texture with the level of vegetable consumption in children with the category of eating vegetables sufficient to 100 g/day. By using the Spermen-Rho test. The results of this study indicate that children's preference for vegetable nuggets is very good, as seen from the average preference for color 3.63, taste 3.70, aroma 3.23, texture 3.61, which means that all categories get a score of 3 to more than 3 or in the like to very like category. Then, at the level of vegetable consumption, the consumption of vegetables meets the requirements, namely 100 g/day, only 4 people and the rest, namely 53 people who do not meet the requirements for consuming vegetables per day. Conclusion: The results of data analysis using the Spermen-Rho test to see the relationship between the level of preference for nuggets and the consumption of children's vegetables, p = 0.529. The results obtained explain that there is no relationship between the level of preference for vegetable nuggets and the level of vegetable consumption in children
