Abstract

Hawker food fried foods on display without cover if too long displayed by the external environment allows the occurrence of contamination from motor vehicle source called heavy metals lead (Pb). The purpose of the research is to find out the relationship long post with the levels of lead (Pb) in fried foods sold in the shore Boboca Malalayang II city of Manado.
This type of research is the study of observational analytic with cross sectional design study, a draft of the study of epidemiology studies the relationship of independent variable i.e. the dependent variable post long time i.e. the levels of lead (Pb) in fried foods. The sample of this research taken from 40 samples with 2 kinds of fried foods sold in the shore Boboca Malalayang II Manado city 2016.
Research results on a sample the fried banana fritters and know the contents containing lead (Pb) ranges from 0.08 – 0.11 ppm. the research indicates that the sample pan fried with a total of 40 samples were taken with 2 (two) types of fried foods are said to be qualified or not to exceed a threshold set by the SNI Standard National Indonesia in number. Of 2009 i.e. 7387 0.25 ppm.
Conclusions on the research there is no relationship between the length of time post with levels of lead (Pb) in fried foods sold in the shore Boboca Malalayang II Manado 2016 and based on those results may be suggested to traders the pan around so the food ways of retaining penyajikan on display well and can use a sealed container so that the Pan does not direct contact with the outside air.
